Meals with Matt Salmon croquettes

It’s another episode of Meals with Matt and this time Matt Myers had a special guest in his kitchen with him this week Mrs. Linda!  Mrs. Linda was on hand to show Matt how to make salmon croquettes paired with grits.  Get all the details on how to cook this delicious southern delicacy that some call salmon patties or salmon cakes!

Ingredients:

Canned Salmon (one can makes about 4 patties)

Onion 

1 small Potato

2 eggs

Bell pepper 

Seasoning salt (nature’s seasoning)

Flour

Cooking oil (canola is good low fat)

Cheddar Cheese

Grits

Butter

Parsley

Chop the potatoes and boil them on high for about 10 mins.  Remove salmon from the can and drain the water.  Debone the salmon by separating the meat.  Dice the onion and green peppers.  Combine the salmon, green peppers, onion and potatoes in a mixing bowl.  Add your two eggs and form like a hamburger patty.  Season with seasoning salt and parsley, and another other seasoning of your choice.

Warm your skillet on high coated with oil.  Coat the patties on both sides with flour.  Cook in the hot skillet for about 7 mins on each side or until a light brown color.

For the grits, bring water and salt in a 3- to 4-quart heavy saucepan, then add grits gradually, stirring constantly with a wooden spoon or wisk. Reduce heat and cook at a bare simmer, covered, stirring frequently, until water is absorbed and grits are thickened, about 15 minutes.  Add in milk and heavy cream let cook a few more minutes.  Stir again add butter and cheese to your liking.  Watch it all happen below:
