Prince–everything about him–even his name speaks royalty.  Prince Rogers Nelson was his birth name, and his favorite color is ‘royal’ purple.  But the award-winning singer who has a ton of hits over the past 30 years comes from humble beginnings. When he was a young, Prince couldn’t afford to eat fast food, so he’d stand outside McDonald’s on Plymouth Avenue in Minneapolis just to smell the food. Which is ironic, as he’s now a PETA-endorsed vegan who won’t “eat anything with parents”.

As he grew, some of his favorite meals were sauteed Spinach with olive oil, frsh garlic, salt and pepper. Cream of Brocolli Soup with Sherry, and pasta. Specifically, spaghetti that he would wash it down with orange juice (yes, orange juice).  But one of his staple dishes is eggplant.  Below is a recipe for a vegan eggplant lasagna that is fit for a King, or even a prince:

Vegan Eggplant Lasanga (serves 4-6)

Ingredients

3 fresh eggplant, sliced (or use chopped artichoke hearts, squash, mushrooms, whatever fresh veggies you have on hand)

1 block firm tofu

2 tablespoons olive oil

1 tablespoon nutritional yeast

1 teaspoon oregano

1 teaspoon minced garlic

1 teaspoon kosher salt

2 cups organic baby spinach

1 box lasagna noodles

1 jar marinara sauce

1/2 cup Daiya vegan mozzarella cheese (optional)
