Ingredients

1 roasting chicken
1 cup of fresh herbs (I used marjoram, basil, parsley, oregano, and cilantro)
1 tablespoon of Kosher salt
1/2 tablespoon of cracked black pepper
5 garlic cloves
1/2 cup of good olive oil
*a blender or food processor

Directions

  1. Preheat the oven to 375 degrees.
  2. Place the herbs, salt, pepper, and garlic into the blender. Drizzle in the oil with the motor running and blend until smooth.
  3. Rub all over the chicken, including under the skin.
  4. Roast in the oven uncovered for 1 hour or until the juices run clear from the thigh of the chicken.
